Singapore based designer Ed Poole

Poole Associates Private Limited]
has given SKY an edgy and
contemporary feel, in a
metallic-grey hued ambience, mood
lighting and a killer view of IT
City from the tenth and eleventh
floors of the hotel, on which its
located. It has two floors,
excluding an open-to-the-sky,
smoking zone. The ground floor has a
young and energetic ambience,
because the island bar (many feet
long) with LED lights runs through
it, with bar stools in close
proximity. There are also private
nooks with sofa seating, and at
convenient arm's length from the
bar. There is a DJ consol (a tie up
with Submerge, Nikhil Chinappa's
music company, ensures that Sky has
a rocking electronic dance music (EDM)
component), with lounge music
playing early evenings, before the
decibel quotient goes up, and a
dance floor too.
The mezzanine floor, leads you,
through a bridge suspended over the
ground floor, and a corridor of wine
cellars shooting up from the bar
below, into a more sedate, lounge
ambience with sofa couches in
seating areas, which can accommodate
up to twenty people for private
do's. There is also a 'fat-ass'
ceiling fan moving at a speed so
slow, that it wouldn't hurt the
inquisitive pokey finger!
Food
Tapas (or short eats) are the order
of the day and the key word here is
global, with a fairly good choice
for vegetarians. As for beverages,
we loved the space-themed names, and
of course, the mixes too! We start
with a Red Spot on Jupiter, a
sparkling wine and fresh peach
concoction, paired with a sushi
platter and it hits the right note,
elegant sips and all. Next up is
Eclipse, with tequila, fresh mango,
mint and cinnamon, paired with
grilled prawns in a chilli-carom
seed marinade. While the drink is a
tad strong for me, I think the
prawns are oh-so-perfect! A perfect
combo follows, Big Bang (vodka,
vermouth and jalapeno juice), paired
with Mirchi Bhajji and garnished
with masala papad and peanuts.
The Nebula Nectar (vodka, chocolate
liqueur and creme de cacao) turns
out to be a killer martini, with the
chocolate providing a melting touch
to the vodka, and we savour the
nectar with Char Roasted Chicken in
Filo Wraps, (superbly crisp and
delish) as well as Scarmorza and
Peppers Bruschetta.
Since one member of our group is a
teetotaler, she tries Sun Downer
(fresh grape juice with minty
sparkling water, Drops of Jupiter
(Green tea with Pineapple and Mint),
Sun Beam (Spicy raw mango with fizzy
water) and Galaxy Quest (apple
cinnamon and ginger), of which the
latter two are most noteworthy.
